Two rounded nodules, marble-size, surrounded by a square piece of under lying brain, pinkish-white in color with red veins on the surface (hypothalamic-pituitary portal veins). The average weight is 31-33 grams.

The bovine hypothalamuses are collected at United States Department of Agriculture licensed establishments. The animals, mixed breed and sex, received ante- and post-mortem health inspection at the abattoir by a United States Veterinary Service Inspector and are certified free from infectious and contagious diseases and that there is no evidence of bovine spongiform encephalopathy infection. All animals were sourced from the United States and processed for human food consumption. The animals yielding source materials are aged 12-20 months.
